Zen Ramen and Sushi Expansion Update: New Locations, Hours, and Seasonal Menus
The core culinary draw remains the kitchen's soup foundation. A traditional tonkotsu ramen broth demands relentless collagen extraction, requiring pork trotters, marrow bones, and aromatics to simmer vigorously under high heat for 14 to 16 hours. When executed correctly, the broth forms a cloudy, emulsified soup base rich in unctuous body without turning cloying.
Alongside the classic tonkotsu, winter and autumn menus feature an assertive spicy miso ramen. The base blends fermented red and white miso pastes, toasted sesame oil, minced garlic, and ground chili paste, poured over springy alkaline noodles. Resting atop the noodles, tender rounds of chashu pork undergo braising in soy sauce, mirin, and sake before getting seared with a kitchen torch immediately prior to service.
Spring and summer updates pivot toward lighter culinary territories. Cold ramen preparations and citrus-infused shoyu broths swap in during higher-temperature months. On the raw bar side, sushi chefs are rolling out specialty sushi rolls accented with yuzu gel, shaved serrano peppers, and seared otoro. Meanwhile, sprawling nigiri and sashimi platters feature weekly flown-in deliveries of bluefin tuna, king salmon, yellowtail, and sweet spot prawn.
Appetizers hold equal billing during high-volume rushes. Tables routinely split plates of pan-seared, crispy gyoza appetizers filled with seasoned pork and cabbage alongside charred edamame dusted with smoked sea salt. To wash down the heat of chili-oil-infused bowls, beverage menus feature shaken boba tea and beverages, ranging from classic brown sugar milk tea with chewy tapioca pearls to effervescent lychee green fruit teas.
