Most people discard broccoli stalks, tossing edible weight directly into the compost bin. Stalks carry a sweet, clean flavor reminiscent of kohlrabi, but their tough outer rind requires preparation. That fibrous exterior shields the stem from heat, forcing you to overcook the delicate crowns just to make the stem chewable.
Take a vegetable peeler or paring knife and strip away the fibrous outer layer until you reach the pale, jade-tinted interior core. Slice these peeled stems into rounds roughly a quarter-inch thick. Because these disks have greater surface exposure than an intact stalk, they cook at the exact pace of standard one-inch florets. Arrange them at the bottom of the steamer basket where direct steam rises first, placing delicate florets directly on top.
