First Look Inside the Dead Rabbit Austin: Architecture, Interiors, and Bar Layout
The Dead Rabbit NYC altered global bar culture when it launched in 2013, stripping away shamrock kitsch in favor of authentic mid-nineteenth-century pub history and precise cocktails. Under Jack McGarry's sole operational guidance following corporate restructuring, the brand has entered a multi-city growth cycle. Austin represents its most ambitious test outside the Eastern Seaboard.
McGarry has repeatedly challenged the notion that heritage bars cannot scale. "Irish pub culture is inherently communal, egalitarian, and vibrant," McGarry noted during project planning discussions. "We are not building a museum piece. We are building a living institution that honors tradition while belonging entirely to Austin."
Securing a foothold in Austin required finding a space that mirrored the structural authenticity of Manhattan's Financial District. The team targeted a historic building whose solid brick boundaries and aged wood provided the bones necessary for authentic Irish pub architecture. Construction teams spent months stripping back late-twentieth-century drywall to expose raw structural surfaces that had sat hidden behind commercial renovations for decades.
